			<content:encoded><![CDATA[<p>   OK, so we haven&#8217;t exactly lived up to our end of the bargain with this website&#8230;and we apologize for that.  So this is what has happened, in a nutshell, since you&#8217;ve heard from us last.  The biggest change since last April is our decision to leave Kansas and move to sunny Key West, Florida!  We packed up our stuff and headed south at the end of October, with the goal of reaching Key West before the big Fantasy Fest parade on Halloween.  Let me tell you, they don&#8217;t have parades like that in Kansas :).  If beads, nudity, public drunkenness, and jello shots sold on the side walk are not for you&#8230;I recommend staying at home, but it was definitely an experience we wanted to take in as our first event as residents of this colorful town. </p>
<p>   So far, we really like living here.  Zack is getting plenty of work doing freelance websites and Kim is a PRN radiologic technologist at the local hospital, Lower Keys Medical Center.  We will make sure to post some new pictures of our Florida adventures soon!  Unfortunately our dog, Kinzie, got really sick and died unexpectedly last week.  She was very loved and will be missed even more! </p>
<p>  Wedding plans are coming along, make sure you check this website often for updates!  I have posted information on hotel rooms, if you have any questions feel free to contact us.  We are in the process of figuring out a time and place for the wedding shower, but we posted the information for our registry and we will be sure to keep this up to date.  I will be in the Kansas City area from March 13-22, so that&#8217;s when the festivites should take place&#8230;be sure to mark your calandars!  We are still in the process of making wedding invitations, we will make sure to get those out soon!  <img src='http://www.kimandzack.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

<p>From the solar paneled tin roof to the organically upholstered furniture within, this truly is a GREEN home.  The HGTV network surely didn&#8217;t skimp on the amenities with their limited 4 month time frame.  Lavish and luxurious, this home is sure to give someone a eco oriented peace of mind&#8230;.I just hope that it is US!</p>

<p>Okay&#8230;so I know that this is not necessarily my style BUT, I swear that the shrimp used were farm raised.  I verified this as best as I could by visiting the <a href="http://www.aquastar.com/Retailers/Products.aspx?c=1&#038;ProductID=4" target="_blank">Aquastar</a> website and researching their company.  I found that they are actually doing several things to promote environmental preservation and the recipe was WELL worth the personal sacrifice!</p>

<p>It seems that these <a href="http://www.aquastar.com" target="_blank">Aquastar</a> characters are actually trying much harder than most fisheries to help our environment but, enough about that.  Let&#8217;s talk about this Shrimp and Artichoke Bake that <a href="http://www.pauladeen.com" target="_blank">Paula Deen</a> so wonderfully provided for us. Thanks, Paula Deen!</p>
<h2>Here Comes the List of Goodies&#8230;</h2>
<p>2 Tablespoons butter<br />
2 Tablespoons of all-purpose flour<br />
1 1/2 Cups of half-and-half<br />
1/4 Cup of crated Parmesan cheese<br />
1/2 Cup of sherry<br />
1 Tablespoon Worcestershire sauce<br />
1 Teaspoon of <a href="http://www.recipezaar.com/Paula-Deens-House-Seasoning-Mix-57340" target="_blank">House Seasoning Mix</a><br />
2 Egg yolks, lightly beaten<br />
One 13 3/4 Ounce can of artichoke hearts, drained and chopped<br />
1 pound of shrimp, cleaned and peeled<br />
(<strong>PLEASE:</strong> Use farm raised shrimp, our coral reefs are severely damaged by many shrimp fisheries around the world, on a daily basis.)<br />
1/4 Pound of fresh mushrooms, we left our button mushrooms whole.<br />
1/4 Cup of grated Cheddar and Monterey Jack cheese<br />
Paprika to taste</p>
<h2>Now, Lets Put Some Heat to It!</h2>
<p>Preheat oven to 350 degrees<br />
Melt butter in a pan over a medium heat&#8230;..blend in flour to make a paste<br />
Add half-and-half all at once and stir till thick and smooth<br />
Add parm, sherry, Wor. sauce, garlic powder, salt &#038; pepper<br />
Temper egg yolks with 2 tablespoons of the hot mixture and add back to the remainder of the cheese sauce. SET ASIDE<br />
Mix the artichokes, mushrooms and shrimp together in a large casserole dish<br />
Pour the sauce over the top, sprinkle the cheese and paprika over the top<br />
Bake for 30-35 minutes - serve over rice&#8230;&#8230;ENJOY! </p>

<p>Hey guys, first REAL post&#8230;YEAH!  Tonight, Kim made a chicken recipe that was awesome, no really&#8230;..it was!  It came from her <a href="http://www.pauladeen.com/" target="_blank">Paula Deen</a> recipe book that was given to her as a gift from her good friends, Cassie and Erin.  I will try and do one of these a week and we will also be trying to account for an activity, weather permitting, once a week as well.  Follow the link below for the recipe and a pic that I took of the dish, mmmmmm.</p>

<h2>So, What Do I Need to Make this Happen?</h2>
<p>Below, I have included the list of ingredients that are required to make this yummy dish:</p>
<li>4 Large boneless chicken breasts</li>
<li>6 ounces, Swiss cheese slices</li>
<li>1 10.3oz can of condensed cream of chicken soup</li>
<li> 1/4 cup of white wine, more if desired</li>
<li> Salt and pepper to taste</li>
<li>I cup herb flavored stuffing mix, crushed</li>
<li>4 tablespoons of butter, melted<br />
<strong><br />
Now, to get this cooking:</strong></li>
<li>Pre-heat oven to 350 degrees</li>
<li>Place chicken in shallow buttered caserole dish</li>
<li>Layer the cheese on top of the chicken breasts</li>
<li>Mix soup, wine, salt &amp; pepper then, pour over cheese</li>
<li>Sprinkle the stuffing mix on top and then drizzle with the melted butter</li>
<p>Bake for 45-60 minutes, enjoy!</p>

Zack here, I am going to do my darndest to keep this blog updated.  I think the simple fact that Kim will be able to track, semi-real time, what is going on with our lives will help.  Afterall, we all know that I could&#8217;nt do it alone&#8230;that is one of  the reasons I have to marry her!  You can all look forward to seeing some recent pics of us, keeping up to date on our activities, learning about the event participants, etc.  My goal with this is to have everyone TOTALLY educated in every aspect of our accumulative lives before it even happens.
